Abstract(s)
A valorização de produtos tradicionais vinculados às regiões de origem, têm
desafiado a indústria alimentar, que ao padronizar a sua produção, perde o
vínculo dos alimentos com os locais de origem, sobrepondo-se às práticas de
consumo locais e diferenciadas. A produção artesanal, associada à certificação de
produtos tradicionais (como processo voluntário) é uma alternativa para
identificar produtos, fortalecer a agricultura familiar e fixar a população a
determinadas regiões.
Com a implementação das Denominações de Origem Protegida (DOP) e
Indicação Geográfica Protegida (IGP) na década de 90 foram criadas expetativas
aos operadores e passado esse tempo, consideramos importante conduzir um
estudo que retrate os principais aspetos deste processo. Neste sentido procedeuse
à análise das alterações ocorridas no processo de implementação das DOP/IGP,
bem como na sua manutenção e evolução até ao momento atual, no intuito de
compreender quais os impactes e expetativas geradas.
O estudo foi elaborado com base na realização de inquéritos a unidades de
transformação, na recolha de informação junto do Instituto Nacional de
Estatística, Ministério da Agricultura e outros estudos entretanto realizados no
domínio da certificação de produtos.
De forma geral, constatámos que desde a implementação das DOP/IGP até ao
momento atual, salvo algumas exceções, o número de queijarias envolvidas em
processos de certificação tem vindo a diminuir, tal como o número de explorações
fornecedoras de leite. Relativamente à produção de queijo, houve um crescimento
até à época de 2006/08, tendo vindo a diminuir desde então. Relativamente às
alterações entretanto ocorridas, foram essencialmente no âmbito da apresentação
comercial do produto.

Practice artisanal production, associated with the traditional products certification (as a voluntary process) appeared as an alternative to identify products, consolidate family farming and fixate people from certain regions. With the implementation of Protected Designation of Origin (PDO) and Protected Geographical Indication (PGI) in the 90´s, some expectations were created on producers, and after that, we considered important to conduct a study that show the main aspects of this process. In order to analyse the changes that occurred with the implementation of PDO process as its maintenance and evolution up to the present moment, in order to understand among the stakeholders if the impacts generated corresponded to the expectations. The study was carried out through surveys, which were delivered at cheese producers, by gathering information through the Portuguese National Institute of Statistics, Ministry of Agriculture and articles published in the area of product certification. In summary, we found that since the implementation of the PDO/PGI to the present moment, with a few exceptions, the number of dairies involved in certification processes has been declining as the number of farms supplying milk. Comparatively the production of cheese, there was an increase to season 2006/08, having decrease since then. Concerning the changes that have taken place, were mainly in commercial product presentation.
